At even the lowest monthly pledge you can read through all of the experiment logs that offer photos and descriptions of the original plants (for organoleptic identification), and the process each product has undergone including proofing (with a floating bulb hydrometer) and pH testing (using litmus paper) to produce the data you see on the labels.
